Maple Sweet Potatoes

Serves: 8

Ingredients:

8 cups of sweet potatoes

⅓ cup of maple syrup

2 tablespoons of butter, melted

1 tablespoon lemon juice

½ teaspoon salt

Pepper to taste

Directions:

Preheat oven to 400 degrees.

Cut and arrange sweet potatoes in a baking dish.

Combine maple syrup, butter, salt, lemon juice, salt, and pepper in a small bowl.

Pour mixture on the potatoes and toss to coat them.

Cover and cook sweet potatoes for 45 to 50 minutes.

Stir every 15 minutes.

Take out when tender.

Let cool and enjoy.

 

Stuffed Peppers

Serves: 3

Ingredients:

3 large orange bell peppers

15 ounce can of tomato sauce

½ pound of ground beef

⅓ chopped onion

1 cup cooked rice

⅛ teaspoon of salt

⅛ teaspoon of pepper

⅛ teaspoon of garlic powder

Directions:

Cut the tops off of the peppers and remove the seeds.

Put them in a small saucepan and cover with water then bring to a simmer.

Bring to a simmer and cook for three minutes.

Drain and dry.

Cut little faces into each of the peppers. (optional)

Cook the ground beef and onion in a skillet, then drain.

Add the salt, pepper, rice, garlic powder, and half of the tomato sauce.

Fill the peppers and top with the rest of the sauce.

Bake for 25-30 minutes at 350.

Pie Crust Recipe

Serves: 8

Yields: 2 pie crusts

Ingredients:

2 cups of all purpose flour

1 teaspoon salt

⅔ cup butter or ⅔ cup shortening

5-7 tablespoons cold water

Directions:

Put flour into mixing bowl with the butter

Using a pastry cutter, cut the butter into the flour

Add salt and water

Mix until dough is formed

Roll out on flat surface

Bake at 375 degrees until brown

Prick crust prior to baking for non filled baked pies

 

 

Pumpkin Hand-Pie Recipe

Serves: Varied

Yields: Varied

Ingredients:

2 pie crusts

1 cup pure pumpkin

2 tablespoons sugar

1 tablespoon butter

1 teaspoon cinnamon

½ teaspoon pumpkin pie spice

¼ teaspoon allspice

1 beaten egg

Directions:

Mix together pumpkin and sugar

Add butter then mix

Add spices then mix

Use a mini pie maker, cookie cutter, or cup to cut out your shapes from the pie crust

Put a teaspoon to tablespoon of your pumpkin mix in the middle of your pie crust

Fold over your pie crust and use a fork to crimp down the edges

Brush the beaten egg over the outside of the mini pie

Cut three vents into the pies

Place them on a cookie sheet and bake them at 400 degrees for 15-20 minutes

 

Mini Apple Pies

Serves: 8

Yields: 8

Ingredients:

Crust (16” x 8” rectangle)

1 large apple

1 tablespoon of granulated sugar

½ teaspoon cinnamon

Directions:

Preheat oven to 425

Peel, core and coarsely grate the apple, put in a bowl and stir in the sugar and cinnamon

Cut the crust into eight 4” x 4” squares

Put about 1 tablespoon of the apple mixture into the middle of the squares of dough and fold the corners into the middle to cover the filling

Pinch the corners together to seal it and then brush the top with your beaten egg and move them to your baking sheet

Bake your mini pies for 8-10 minutes or until they turn golden brown

 

Apple Cider

Serves: 6

Ingredients:

1 orange, sliced

1 ½ teaspoons of whole clove

4 granny smith apples, sliced

4 red delicious apples, sliced

1 ½ teaspoon of whole allspice

3 sticks of cinnamon

8 cups of water

Directions:

Place all of the fruit and spices into a slow cooker.

Add the 8 cups of water and cook on high for 3 or 4 hours.

Uncover and mash softened fruit with a potato masher.

Cover again and continue cooking on low for 1 or 2 hours.

Strain and serve warm.
